Garbanzo bean flour also contains a variety of minerals including calcium, iron, magnesium, phosphorus, potassium and zinc. Whole grain sorghum flour is a powerhouse of nutrition and adds a superb flavor to gluten-free baking. It is a good source of protein, iron, dietary fiber and antioxidants. Fava bean flour is an excellent source of protein and potassium. It also contains thiamine, riboflavin, niacin and vitamin B6, and it is a very rich source of dietary fiber. Compared to other grains, teff has a much larger percentage of bran and germ, so it's a very good source of dietary fiber, protein, iron, and calcium. The calcium content in teff significantly surpasses that of all other grains.
