All Natural Pulled Chicken Quesadilla

1lb All Natural Rotisserie Chicken Meat Pulled

1oz Pickled Red Onion, chopped

2/3 cup Southwest BBQ Sauce

1oz Roasted Pablano Peppers, peeled julienned

1oz Caramelized Onions

4oz Smoked Gouda Cheese, shredded

4 Flour Tortillas

Sour Cream

Lime Juice



  1. In a large bowl, toss together the filling ingredients to mix evenly.
  2. Divide the filling into 4 equal portions. Place the mix in the bottom half of the tortilla.
  3. Fold over to create half-moon then transfer to parchment lined sheet pan
  4. Bake in 350 degree oven for 10 minutes
  5. Allow to cool and add sour cream and lime juice to taste
