2021 COS Spumante Frappato Metodo Classico Extra Brut Terre Siciliane

Winemaker Notes:  100% Frappato from estate organically grown grapes in Vittoria. Fermented and aged in amphora with only indigenous yeast. Secondary fermentation was achieved through the addition of grape must added to a previosu vintage's still wine and then bottled with no sugar added (think Agrapart Experience or Vouette et Sorbée Sobre). Disgorged with no dosage. Fairly fresh pink color and showing hints of strawberries and raspberries in the nose. Floral, rhubarb and cherry notes lead into a wine with bright freshness and mineral backbone. Tense with a persistent finish, this wine is hopping with plenty of life ahead. Very complex, high-toned with delicious red fruit.
