ABOUT THE WINE
Stefano Perrone’s Bigarò is one of Piedmont’s best aperitivo wines. Bigarò is a softly sweet, gently effervescent salmon-colored sparkler made from Brachetto and Moscato grapes. The Muscat and Brachetto combine to provide the best of what each has to offer. Similar to Moscato in sweetness, the Perrone Bigarò substitutes red fruits for Moscato’s typical tropical fruits. Enjoy wild strawberry, raspberry and rose notes.
VINEYARD NOTES
The vines average between 25 and 60 years old. Perrone's vineyards face northwest. Stefano Perrone believes that ripeness is easy to achieve if yields are kept reasonable. His vineyards cool down in the evening and, thus, are able to retain more acidity and freshness. Harvest is done by hand.
WINEMAKING NOTES
Grapes are softly crushed in order to preserve all fragrances. The must macerates with the pomace for 4-5 days to extract all the color and the aromatic patrimony. After destemming, fermentation is carried out at a low temperature in an autoclave.
