Winemaker Notes:  Jewell bright dazzling cranberry juice pink, the aromas are a riot of cherries – red cherry, cherry pip, glacé cheery – all the cherries! The palate follows up with pomegranate, blood orange, spice and a savory, amaro twist of raspberry salted licorice on the finish. The bubble are persistent but soft and foamy and there’s a mouthwatering freshness from the snappy Nero acidity and the zippy, crisp Arneis. Serve cold, no need to shake before opening, pair with pizza, parks and sunsets. 

In 2022, Tim doubled down on the stylistic experiment he carried out in 2021 to make the Piggy Pop a proper pink wine by adding up to 30% white grapes to the base of red fruit. This has two unique outcomes; first of all it allows him to press his gorgeous, fruity, and juicy red grapes more than he used to, which essentially means he’s getting more fruit power, more “pop” from the Nero d’Avola, Mataro and – for the first time – Lagrein. Secondly, it produces a genuinely unique style and hue of rosé, like discovering a new color in the rainbow that sits hidden somewhere between red, yellow and orange. Taken together, these two natural techniques give more flavor and a dazzling and original color. Plus, Tim thinks by making the Piggy as a rosé blend of white grapes and red grapes that it has even greater drinkability and a mouthwatering freshness. The 2022 vintage in South Australia was superb, with growing conditions close to the near perfect vintage of 2021 that preceded it. As is often the case in very good vintages, high quality came with equally good yields as the vines were happy and healthy.

Tim Wildman is a British Master-of-Wine-(MW)-turned-winemaker. He became an MW in 2008 with a dissertation on Australian wine, which is now his professional specialty. He was awarded the Robert Mondavi Memorial prize for the highest score in Theory and his dissertation achieved the highest pass mark in his year. During a trip down under with his James Busby Travel Company (a wine education/travel company for industry folk), Tim got the crazy idea of making wine. More specifically, he wanted to make pét-nat, because this would allow him to pick the grapes, make and bottle the wine, all while on a month long trip. Pét-nat was also an apt choice because Tim was wary of stepping on the toes of growers/producers with 100+ year business plans. By sticking to the "less serious" pét-nats, he could avoid competition with those he holds in high regard. The lineup includes one white and one rosé pét-nat. Both zero-zero wines are made with a particular focus on climate appropriate varieties. Thoughtful wine in fun packaging is the vibe.

Aromas of orange peel, pomegranate and cranberry and the palate is a wild sorbet of cranberry with joyful pomegranate depth and plenty of raspberry froth. A little spicy jazz on the finish. I’ve never tasted a blend like it – Mataro, Nero d’Avola, Lagrein and Zibibbo. For lovers of pét-nat’s rugged magic, it’s a banger.
