Winemaker Notes: Grapes are hand picked and whole cluster pressed. The juice is fermented slow and cold in stainless steel. The wine is bottled with residual grape sugars remaining and finishes fermenting in the bottle producing the bubbles. The wine is then disgorged to remove the yeast, but no sugar is added.
