Winemaker Notes: 100% organic Grignolino from Langhe Piedmont, given the metodo ancestrale treatment. Hand-harvested into small bins. Spontaneous fermentation with 5 to 8 days maceration. Aged in 100hl cement & fiberglass tanks for 6 to 8 months until bottling. Bottled with minimal sulphur (~10ppm) and without sterile filtering or fining. Big fizz and tart, lip-smacking fruit.
