Winemaker Notes: From far in the north of Japan, comes this very traditional sake. This sake from the Yamato brewery uses the shizuku method of extracting the liquid from the rice solids. Instead of pressing the rice against a filter, it is hung in cloth bags and left to drip. Only this free run liquid is used for fermentation. Additionally, the brewers use the kimoto method of yeast cultivation (a labor intensive process of mixing the rice and koji with long poles). The brewery, one of many in this sparsely populated corner of the island, proudly uses only local water and indigenous rice varieties. The adherence to the local and traditional pays off. This is such a beautifully and intricately aromatic sake, and exceedingly pure and clean on the palate. It has the clarity, energy, and vitality of water melting from the mountain snows.
