2015 Domaine Rolet 'Vin Jaune' Arbois Jura 620ml
Winemaker Notes: Even though the miniscule, isolated region of Jura dates its winemaking back almost 2000 years, Domaine Rolet certainly makes a name for itself in the modern history of the region. Begun by Désiré in 1942 and carried on by the same family until 2018, it is thanks to the current direction by Cedric Ducoté that the estate today has grown to its current potential. Since he has taken over, the estate has begun conversion to organic viticulture, something considered quite a feat in a region where farming in the rugged mountainous terrain is rather difficult. The domain has holdings in all four of the region’s appellations; Arbois, Château-Chalon, Côtes du Jura and Etoile.
In Jura, this is known as “yellow wine.” Unique in character in both flavor and production, this wine has similarities to sherry and dessert wine. The Savagnin variety, unique to Jura, undergoes a process where natural yeasts in the air are encouraged to settle into the space on top of the juice after its late harvest. During the veil, or “voile” that formation on top, a natural oxidation occurs giving the wine more aging potential. The wine ages in barriques for six years before release. Drink with the regional cheeses of Jura and other local specialties.
