2018 Pearl Morissette 'Irrévérence' Blanc Niagra Peninsula
Winemaker's Notes: The second vintage of our Irrévérence is just as mercurial as the previous one, but still more textured. A blend of Riesling, Chardonnay and Gewürztraminer, that has also graced by 30% noble rot in the Gewurtz portion, this is a completely dry wine that has stolen our hearts and twisted our minds in our exploration of skin-fermentation. A wine with a rich and indulging perfume that shines with golden nuance and honeyed notes. The palate flows in unexpected ways - satiating and unrelenting; lively, yet smooth and rich. Exceptionally dynamic with a wide variety of foods, this is a wine possessing of flavor harmonies we have not encountered before, but are more than thrilled to have on our hands.Drink now or cellar for 8-10 years. 2018 Irrévérence is a blend of Riesling from Butler’s Grant vineyard in 20 Mile Bench. (35.4%) Chardonnay from Redfoot Vineyard in Lincoln Lakeshore (25.1%) andGewürztraminer from Knizat vineyard in NOTL (39.5%). The fruit was respectively picked on October 7 , September 27 and October 8 and 29 of (two separate picks for the Gewurtz). The Chardonnay was fermented and aged in foudres, the Riesling in foudre and stainless steel. A portion of the Gewürztraminer was co-fermented with Riesling on skins in qvevri for a total of 6 months, while the rest (carrying 30% noble rot) fermented to complete dryness in a foudre. The wines aged separately in their fermentation vessels on primary lees for 12 months, before being blended for an additional 12 months of aging in a combination of concrete and foudres.
