Saperavi Reserve is a Qvevri wine produced with traditional Kachetian technology. The maceration lasts 3.5 months in Qvevri on full grape skins with pips and stems. After that, the wine is matured in oak barrels for another 3 months. Sulphites (SO2) are only used to disinfect the Qvevri. The Saperavi vines are over 40 years old, located at the bottom of the Caucasus up to 480m above sea level. The soil has a light mechanical structure (Cordier carbonate sandy soil) and does not require watering.
